PepsiCo launches refrigerated gazpacho and guacamole line, betting fresh pulls buyers from shelf-stable

The snack giant enters the cold case to capture consumers willing to pay more for perceived freshness.

In plain words

Refrigeration is a quality signal consumers will pay **15-20 percent** more for, even when formulation barely changes.

PepsiCo is moving a chunk of its innovation budget into the refrigerated aisle, launching gazpacho soups and fresh guacamole under new sub-brands this year, according to Modern Retail. The company is chasing a documented consumer shift: shoppers increasingly associate refrigeration with quality and will pay a premium for products that require cold storage, even when shelf-stable versions exist at lower price points.

The move puts PepsiCo products into the perimeter cold case, the high-traffic zone where gross margins run tighter but velocity and basket attachment rates run higher. The gazpacho line launches in single-serve cups designed for grab-and-go, while the guacamole enters in multi-serve tubs positioned against established fresh brands like Wholly Guacamole. Both carry prominent "refrigerated" callouts on pack, signaling freshness before the customer reads a single ingredient.

The mechanism is format arbitrage. Refrigeration acts as a quality cue independent of actual formulation differences. Research from the Refrigerated Foods Association shows consumers rate identical products as fresher, healthier, and worth 15-20 percent more when they come from a cold case versus a shelf, even when ingredient lists match. PepsiCo is leveraging that halo: the gazpacho and guacamole formulations are not radically different from ambient-stable versions other brands sell, but the requirement for cold chain distribution and the placement in the perimeter create a perception gap the company can price into.

The risk is operational. Refrigerated distribution costs two to three times more per unit than ambient, and cold case slotting fees at retail run higher because space is scarce and turnover expectations are strict. PepsiCo absorbs that cost to access a consumer segment that skews higher income and buys more frequently. The company is also using the refrigerated line to pull trial from buyers who dismissed shelf-stable PepsiCo snacks as processed, betting that a cold SKU resets brand perception.

A small brand can run the same play without PepsiCo's distribution muscle by using refrigeration as a strategic constraint, not a cost burden. If you sell a product that can physically survive at room temperature—nut butters, certain baked goods, spice blends in oil, even some confections—reformulate or repackage a SKU that requires refrigeration after opening, or better, before. Add fresh herbs, live probiotics, or cold-pressed elements that force cold storage. Then sell exclusively through channels that have existing cold infrastructure: local co-ops, natural grocers, farmers market stalls with coolers, or DTC shipments with ice packs. The refrigeration requirement becomes your differentiation story and your price justification. A $8 ambient granola becomes a $12 refrigerated granola with fresh fruit inclusion, and the buyer perceives the delta as value, not markup. Print "keep refrigerated" in large type on the front panel. The format does the marketing.

For DTC brands, the tactic is even cleaner: ship with branded ice packs and a card explaining the fresh inclusions that require cold storage, even if the product would technically survive a few days at room temp. The unboxing experience reinforces premium positioning, and the ice pack becomes a tangible proof point the customer can photograph and share. The incremental cost is $2-3 per shipment for the pack and insulation, but it supports a $5-8 price increase if the product and messaging align.

PepsiCo is making a billion-dollar bet that fresh format trumps brand legacy in the next growth cycle. For a smaller operator, the lesson is narrower and more urgent: if your product can live in a cold case, it probably should, because the format is doing positioning work your ad budget cannot afford to buy.

For the principal

Reformulate one SKU to require refrigeration with fresh inclusions, sell it through co-ops and DTC with ice packs at $5 higher price.

For the operator

Pilot a refrigerated line extension in regional natural grocers, absorb cold chain cost to test if fresh format pulls trial from new buyer demos.

For the house

Source refrigerated versions of ambient products for corporate gifting to signal quality and care, expect to pay 15-20 percent premium over shelf-stable equivalents.
